Executive Chef - Shane O'Neill

Having picked up awards for Best Hotel Restaurant in Ireland and Best Outdoor Dining Space in Ireland at the YesChef Awards, we decided to release Brand-New Earth & Vine and Afternoon Tea Menus. With the success these have had since launch we’ve deemed it the right time to tell you a little bit more about the man behind creating these intricate menus.

Executive Chef Shane O’Neill has built himself an impressive repertoire in his professional career having over 30 years’ experience in the kitchen in the build up to joining Castleknock Hotel in July 2023. Chef Shane has absorbed an abundance of knowledge from his time in different kitchen environments having previously worked in numerous hotels, gastro pubs, restaurants and cafés in both Ireland and the UK.

Upon his arrival here last summer, he stated that “I have absorbed much knowledge from each of these places and I look forward to developing dishes at Castleknock Hotel with the talented team that showcase this experience.” Since then, Shane has delved into the array of talent within his team to create an abundance of new dishes in both 22 Bar & Restaurant and now in Earth & Vine Restaurant which have delighted the palates of our guests.

Shane also set himself an imperative task upon his arrival last year stating, “I try to assist each team member’s development where they can create food that everyone in the hotel can be proud to serve and customers are delighted to eat and enjoy.” Needless to say, he has certainly smashed this goal thus far with the hotel having been awarded as Best Hotel Restaurant in Ireland at the YesChef awards for Earth & Vine Restaurant.

Chef Shane and his team have created a delightful, innovative array of dishes for each of our New Earth & Vine Menus including the guest favourite, ‘Monkfish Spicebag Chicken Wing Lollipop’. This dish alongside many others combines the intricacies of cooking a delicacy like Monkfish and combining it with one of Ireland’s favourite dishes, a Spicebag. This artistic cuisine is prevalent throughout our new menus, with a diverse range of Vegan & Vegetarian Dishes also available on our new Vegan & Vegetarian Menu which we’ve partnered with ‘Plant-It Food Co.’ to create.
